Published November 2025 • 4 min read

Executive Summary

  • / Coastal grove elevation and Ionian sea winds create a unique stress-profile for Koroneiki trees.
  • / High-phenolic oils act as a natural 'acid' to cut through the richness of fatty fish like sea bass.
  • / The proximity to the sea introduces a subtle salinity to the fruit's aromatic profile.

The Ionian Sea doesn't just provide the backdrop for our estate; it provides the flavor. Our groves are situated on south-facing terraces that are naturally cooled by coastal winds. This unique stress on the Koroneiki trees creates a high-complexity oil.

In the Peloponnese, the simplest preparation is the most revered: freshly caught seafood, open flame, and fresh oil. For this post, we took our Robust Ekklisitsa parcel onto a local weathering boat, just as the sun broke the horizon.
